Yes, you can without jailbreaking. But you need a computer. And it doesn't work with iOS 6. Read THIS, then ask more questions if needed.

You'll be able to work around the issue with iOS 6 if you jailbreak. I don't think there is a jailbreak for iOS 6 yet though. So you're pretty much stuck for now. Don't you just love Apple?

In some cases...but others not really. Incredibly, phenomenally, amazingly annoying because I don't exactly like the default GHI and I want to copy in my own. :/

Yup, they make good hardware. And good software, I mean Apple computers seem to run smoother and crash/virus a lot less than Windows. The problem is that they don't like you messing with their stuff. Even simple stuff like customizing the look of your iPod.
