You can't replace files like that.
Unless they implement a Texture-pack option (Kinda unlikely due to a lack of complete Texture-Packs), then this wouldn't be possible.
Apple Sets up an App like this:
Documents (Where all the stuff that the game saves so you don't lose progress. i.e. Your Worlds and inventory are stored in this folder)
"App name".app (Where all the code, icons and everything else that the game needs to run is stored in here)
Library (Where all the little random things are stored, Some apps if small enough store their saves in here. i.e. Junk Jack stores information of the iAP's you've purchased in here...)
tmp (I've yet to find an App that has stored anything in here, but I assume it's for when a app is using something that hasn't been saved)
To change textures, we use the "App Name".app folder, which cannot be modified by anything (Well, any apps on the App store, the Cydia store is a different matter though..)
So therefore, what you are suggesting requires either a cydia store tweak, or a Texture-Pack option, which, let's face it, if we had the Texture-Pack option, we wouldn't need the App.
